I want to start doing something new on my blog once a week. I am going to make something "new" for my family to eat. The I will post the recipe and the critique of Craig and the girls. If you are lucky I might get a photo published too! This weekly post, meme, or whatever you want to call it will be called "Sloan Test Kitchen."
This week I made Loaded Potato Soup. It went over BIG! The only one who did not eat it was Kelsea and well, she doesn't like potatoes anyway! (Crazy kid!)
Here is the recipe:
Loaded Potato Soup
Ingredients
- 3 lbs red potatoes, unpeeled, cut into large chunks
- 2 c. water
- 1 carton chicken stock
- 1 white onion, chopped
- 3 T. margarine
- 2 T parsely
- seasoned salt
- garlic pepper
- 2 T.chopped garlic
- 1 large can cream of mushroom soup
- 1/2 c. sour cream
- 1/2 c. milk
- 3 cups shredded cheese, divided into 2 and 1
- Chives
- 1/2 lb bacon fried crisp
- Put potatoes in large stove top pot, cover with water and chicken stock. (May need more liquid)
- Boil with onion, seasoned salt, garlic pepper, margarine, garlic, and parsley - uncovered, to allow liquid to reduce
- When potatoes are just tender add the mushroom soup, sour cream, milk, and one c. cheese
- Cook another 10 minutes or longer
- Top each serving with more cheese, chives, and bacon
Try it... I am sure you'll love it as much as we did!

OK....I tried this last night and let me tell you it is by far the best soup I have ever cooked! The fam LOVED it! This will be a regular in our house. Thanks for sharing!!!
